The wine ageing process is completed in the barrels cellar. These can
contain from 25 to 80 hectolitres each and are therefore much larger than
the barriques.
They are usually made of Slavonic oak, even though in September 2004 we
also introduced two barrels in French oak, which releases sweater tannins.
If regularly cleaned and properly kept, in order to prevent the wood from
contaminations which would seriously damage the wine quality, barrels
can last for a long time, even up to 20 years.
The wine rests in the barrels cellar for several months, 12 to 15. After
this the it is then bottled and left to refine here for at least nine
months.
